
Sooooo this recipe was requested multiple times when we offered them as a tasty morsel at the Vegan Expo we recently attended. Warning these aren't the most healthy but great for a sneaky little treat! Enjoy ....
- 1/4 cup Castor Sugar
- 1/2 cup Brown Sugar
- 1/2 cup Coconut Oil, melted
- 1 tsp Salt
- 1/4 cup Non-Dairy Milk
- 1 tsp Vanilla Extract
- 1 1/2 cups Flour
- 1/2 tsp Baking Soda
- 1/2 cup Dark Chocolate Chips

In a large bowl, whisk together sugars, salt and melted coconut oil.

Whisk in milk and vanilla until batter is smooth.

Sift in the flour and baking soda, then mix together being careful not to over mix.

Fold in chocolate chips evenly.

Chill for 30 minutes or longer. If you like more thin chewy cookies, chill for them around 10-15 minutes. Whilst chilling preheat oven to 180ÂșC.

Scoop dough with a teaspoon onto a baking paper lined oven sheet, be sure to leave 2 finger spaces between each cookie so they can spread evenly. Gently push down a little with a fork.

Bake for 12-15 minutes or till they start to brown. Take out and cool on racks.
Note: Leave the batter in the fridge overnight for a more caramel flavour.
